What are the guidelines if one accidentally eats a small portion of pork (or some other non-kosher meal) without knowing?

If one accidentally eats something that is not kosher, the guidelines are rather simple: there are none. The sages acknowledged that, at times, we might accidentally mess up. And if that were the case, we should just carry on. No ritual to perform, no prayer to say.
