Do you include Jewish/Christian ethnic foods/prayers on Thanksgiving?

We're writing an article about Thanksgiving --the all-american holiday --and how people like to include their own ethnic/religious foods...like how my sister's MIL brought kasha varnishkas instead of sweet potatoes; and our Italian friend makes meatballs and turkey... Do you do this? What foods are special in your ethnicity? We are also thinking about prayers... e.g. my family says the sheheyanu often, and on Thanksgiving...Do you have any special family prayers, that you like to say on Thanksgiving, that might not be strictly "Pilgrim"? I'm a Canadian born Chinese, and traditionally, we'd brine our turkey in soya sauce and garlic before cooking it.  Stuffing was usually made with mushrooms and sticky rice.  Sides?  Bok choy or gai lan.

This year, however, I made quinoa stuffing.

By the way: Canadians celebrate Thanksgiving in October.
