Perhaps the key to helping the non-Jewish partner become more comfortable with High Holy Day liturgy is for the Jewish partner to make peace with it beforehand. There are many excellent short essays dealing with Un' Taneh Tokef that are available in the book "Who By Fire, Who By Water", edited by Dr. Lawrence Hoffman, and an article by Rabbi Naomi Levy published in The Forward some years ago. The challenges presented by this liturgy should be addressed by clergy and lay educators  in all congregations  even if there aren't any interfaith families who are members. I taught such a class recently and it was very well received.
